About Carlos
Vesta is excited to highlight Carlos Cole, Executive Chef in Palm Harbor, FL.
Carlos started his career with Vesta nine years ago as a line cook. He worked under multiple head chefs in that time, who had a multitude of strengths. When asked about his background, he shared:
“[Their strengths varied] from homestyle Americano to upscale French cuisine and even some Thai cuisine as well. I’m originally a Midwestern boy from St. Louis, MO but my mom was a Southerner. So, I guess my background in food would be deep-rooted in my mother’s southern kitchen. After five years with Vesta, I was graciously promoted to line manager. I was in charge of Sunday’s brunch menus and daily operations. Two years later, after the departure of Chef Cathy, I was given the opportunity to be the Executive Chef for the Westshore Yacht Club. My start as head chef has been a challenging one, especially because my first year was at the beginning of the COVID-19 pandemic.
Vesta proved to be the best company ever – deciding to stay open and keeping their employees employed when every other place in the industry was closing their doors. Vesta has given me extended knowledge on leadership by offering ‘Flight School.’ This knowledge will help me in my career and day-to-day life as well. I am truly grateful to Vesta. As I round my second year as the Executive Chef, I hope to make Vesta proud and continue to uphold the vision of Eagle Pride.”
